Family Dinner: Cincinnati Chili

And now I present to you Cincinnati Chili....the other chili.  The best chili (really).  I love this stuff.  The ingredients are weird, but it is good.

I made this on the stove, but you can just dump everything in a crock pot and let it cook for 6-8 hours and adjust your spices before eating.  If it is too soupy, turn it on high and cook uncovered to reduce some of the water content.

My favorite way to eat this is on top of spaghetti noodles, with shredded reduced-fat cheddar cheese, diced onion, and lots and lots of Franks red hot sauce.


Cincinnati Chili
Makes 8 Servings
230 cals / 8g fat / 15g carbs / 23g protein

2 lbs 96% lean ground beef
3 cups water
2 small onions, minced
4 cloves garlic, minced
1 28oz can crushed tomatoes
1 6oz can tomato paste
2 TB apple cider vinegar
1 TB Worcestershire sauce
4 TB chili powder
1/2 tsp cayenne pepper
2 tsp cinnamon
1 tsp allspice
1 square (2 rectangles) unsweetened bakers chocolate
2 bay leaves (remove these before serving)
1 tsp salt
1 tsp pepper


Mix the beef and water in a large pot until the beef is broken up into tiny tiny pieces, like a meat slurry.  Place the pot onto stove over medium heat.  Add the remaining ingredients and bring to a boil.  Partially cover and reduce heat, allowing to simmer about 2 hours, stirring occasionally.  Adjust your seasonings and serve over spaghetti noodles.

  1. YES! Chili Mac!!!! I just made some for lunch last week, it's one of my favorite things ever. You might be the only person I know out here who appreciates some good chili. Can we have a beer and real chili night sometime?

    1. Like I needed another reason to love you....of course you would also love real chili! Go Ohio! I think a beer and real chili night is a must. How does your recipe compare?

    2. Pretty close! The only thing I've never added is the apple cider vinegar, but we buy that by the gallon jug for Bob's BBQ sauce. And I use cocoa powder instead of baker's chocolate, so I'll have to give that a try!

  2. How much baking cocoa powder would you use to substitute for the bakers chocolate squares?

  3. Hi Kim! It is 3 TB cocoa powder for 1 square of chocolate. 6 TB sounds like a lot though. I would start with 3 and then add more if you think it needs it.
